Honey Christmas Cookie (Gluten Free)

Our favorite time in the winter season is when we decorating the Christmas tree. Baking and crating yummy things we can hang on the tree. Each day the kids can get one or two 🙂 cookies from the tree as we get closer to the Christmas Eve, the day when we open the presents. This recipe is a delicious Christmas cookie that took me a lot of tries to make taste good without processed sugars and gluten, but they smell amazing and tast so good!

Gluten Free Honey Christmas Cookie

This delicious honey Christmas cookie will make your house smell amazing, your Christmas tree look great, and they're so delicious!

Ingredients

  • 1 cup honey
  • 3 tbsp coconut oil
  • 1 tsp orange flavor
  • 1 1/2 cup Namaste Gluten Free Flour
  • 1 cup almond flour
  • 2 tsp pumpkin pie spice mix
  • Ginger to taste (optional)

Instructions

    1. Preheat oven to 350F (60C)

    2. Gently melt the honey, coconut oil, and orange flavor together until liquid to make it easier to mix the dough, but you don't want it hot.

    3. Mix the wet and the try ingredients together. I keep extra flour on the side to work with the dough but not more then just a slight coat as I roll them out otherwise the cookie will be too dry.

    4. Roll the dough out to about a quarter inch (half a cm) and cut out the shapes.

    5. Bake cookies at 350F (60C) for about 8 to 10 minutes. If you see the side of the cookies are getting slightly browner than the middle remove them from the oven quickly, as the honey tends to burn quick.

    6. Allow cookies to cool down (ha ha if you can, we have to taste it when it’s still hot because it’s smells so good).  If you wanna hang it on a the tree use a straw to create a hole to hang them before baking.
