This recipe is super easy to make. It’s easy enough that my 13 years old son can whip it up in 10 minutes.  It’s a very light breakfast that bakes very fast so it’s perfect for a busy morning. You can change it around by choosing different fruits to put on the top. We love strawberries, peaches, plums with a little cinnamon and blueberries.

Ingredients

3 eggs

3 tbsp maple syrup

1 tsp vanilla flavor

1/4 cup tapioca starch/flour

1/4 cup almond flour

coconut oil to grease the pan/glassware

pinch of salt

 

Separate the eggs. Add vanilla flavor and maple syrup to the egg yolks and mix it. Set aside.

Beat up egg whites with a pinch of salt. Once the egg whites are stiff, gently fold the egg yolk mixture and the flours into it.

Grease a pie shape glassware with coconut oil or if you double up the recipe a regular rectangle Pyrex dish will be perfect. Pour the mixture in and add your choice of frozen fruits.

Bake it on 350 F for about 20 minutes or until  the top is golden brown but be careful it bakes fast. Test with a toothpick on the middle if it comes out clean it’s done. Let it chill a little before you serve it.

      I believe she means “stiff” as if you were making them for a meringue pie.
