This recipe is super easy to make. It’s easy enough that my 13 years old son can whip it up in 10 minutes. It’s a very light breakfast that bakes very fast so it’s perfect for a busy morning. You can change it around by choosing different fruits to put on the top. We love strawberries, peaches, plums with a little cinnamon and blueberries.
3 tbsp maple syrup
1 tsp vanilla flavor
1/4 cup tapioca starch/flour
1/4 cup almond flour
coconut oil to grease the pan/glassware
pinch of salt
Separate the eggs. Add vanilla flavor and maple syrup to the egg yolks and mix it. Set aside.
Beat up egg whites with a pinch of salt. Once the egg whites are hard, gently fold the egg yolk mixture and the flours into it.
Grease a pie shape glassware with coconut oil or if you double up the recipe a regular rectangle Pyrex dish will be perfect. Pour the mixture in and add your choice of frozen fruits.
Bake it on 350 F for about 20 minutes or until the top is golden brown but be careful it bakes fast. Test with a toothpick on the middle if it comes out clean it’s done. Let it chill a little before you serve it.
Thank you so much for all of your wonderful content!!! I can’t wait to make this recipe! Have you ever made this without eggs? I am afraid that I am unable to consume eggs, dairy and wheat, so I will give it ago with using an egg substitute…wish me luck!
I tried this recipe yesterday and it was delicious!

Noemi! My family loves this recipe. I have two picky eaters and they really enjoy this breakfast. Planning on having it today with blueberries. We also experiment with other fruits. So good, so easy! Thank you for sharing it with us. Now I can print it!
Hello from Va. I have watched your videos for a long time. One time you mentioned eating to avoid or prevent diabetes. Is there any way you can share a video on the foods you avoid or how you eat to do that. I would love more recipes for that and videos.
Hi Noemi. I’ve been wanting to try this recipe and made it this morning. It was so light and good. Like eating a blueberry cloud. 🙂
I live in southwest Washington and really enjoy your videos about how you make your home cozy during our gray, rainy months. Thanks for welcoming us into your home and creating a bright spot in our day!
Thanks for this recipe. What do you mean by the egg white are hard?
