Dragonfruit Energy Bars

There was a time when I was making bars obsessively laughing and I have so many different kinds that I want to share with you! This bar uses some dragonfruit powder and I love the color and taste of it.

 

This bar is perfect for a quick, on-the-go snack. It is delicious and easy to make, and my boys love this in between school and activities, after a workout or practice, or just when they need a little snack. Because of the collagen powder, dates, and almond flour, these bars give you a great boost of energy and help keep you full.

 

 

I get the dates and the collagen peptides from Costco. Collagen peptides are very healthy and strengthening for your body especially bones, skin, and hair. They help to prevent arthritis or joint pain. It is also a great source of protein. You can also get this brand that I like on Amazon.

 

 

I get the raspberry powder and dragon fruit powder on Amazon as well. You may be also able to find these at your local health food store! I love these powders as you can add them to just about anything for a delicious taste and to add color. I love them in smoothies, oatmeal, bars, sweets, or anything else you can think of! You need very little of the powder in recipes so these bags last a long time.

 

I also use the raspberry powder in my raspberry bites which are also a delicious and healthy treat!

 

To make these bars, you will need a food processor. Add pitted 10 medjool dates into the food processor.

 

 

Melt the 1/4 cup cocoa butter and add it into the food processor with the dates. The cocoa butter helps the dates not to stick into a big ball in the food processor it’s just easier to blend it.

 

 

Turn the food processor on until the dates are finely diced and mixed up with the melted cocoa butter.

 

 

Put the date mixture into a mixing bowl and add the collagen peptides…

 

 

Plus the almond flour, dragonfruit powder, raspberry powder, and vanilla!

 

 

Stir it together using a spatula!

 

 

Once it is all mixed together, get out a large piece of wax or parchment paper, or a silicone baking mat. Pour the mixture onto half of your paper or mat and shape it into a rectangle, about half an inch high. Fold the other half of the paper or mat on the top of the rectangle and use a rolling pin to flatten and even out the rectangle. There is a video of how I did this below!

 

Place the prepared rectangle into the fridge for at least 15 minutes for it to harden.

 

 

Once the mixture has been in the fridge for at least 15 minutes, take it out and cut it into bars!

 

 

I like to wrap up each individual bar in wax paper so that they don’t stick together and are easy to grab for a snack. You can find fun and cute wax paper on Amazon!

 

 

Store the bars in the fridge for whenever you want a yummy snack!

Dragonfruit Energy Bars

Delicious energy bars that are gluten free!

Ingredients

  • 10 medjool dates
  • 1/4 cup cocoa butter
  • 1 teaspoon collagen peptides
  • 1/4 cup plus 1 tablespoon almond flour
  • 1 teaspoon dragon fruit powder
  • 1/2 tablespoon raspberry powder
  • 1 teaspoon vanilla flavor (alcohol free)

Instructions

  1. Melt the 1/4 Cup cocoa butter. Add the 10 medjool dates and melted cocoa butter to the food processor and process until well chopped up. Pur this mixture into a bowl.
  2. To this mixture, add the remainder of the ingredients: 1 teaspoon collagen peptides, 1/4 Cup plus 1 Tablespoon almond flour, 1 teaspoon dragonfruit powder, 1/2 Tablespoon raspberry powder, and 1 teaspoon vanilla flavor. Mix together with a spatula.
  3. Once it is all mixed together, get out a large piece of wax or parchment paper, or a silicone baking mat. Pour the mixture onto half of your paper or mat and shape it into a rectangle, about half an inch high. Fold the other half of the paper or mat on the top of the rectangle and use a rolling pin to flatten and even out the rectangle. There is a video of how I did this on my website.
  4. Place in the fridge for at least 15 minutes to let it harden. Then, chop the bars into whatever shape you want. I like to wrap the bars individually in wax paper and then store them in the fridge for whenever you need a snack!
